Culinary, authentic and cultural experience

    

The unique project of "El Carmel" was created 10 years ago by "Nations & Flavors" in the village of Usafia in the Carmel. It enables for the first time to take a glance into the life of the special ethnic group, their houses, their food and their stories.
"El Carmel" is an adventurous project designed for Israelis as well as tourists visiting the area. The purpose is to expose visitors to the life of the Druze, by getting to know the way of life of those sensitive beautiful people who live among us and we know so little about.
A Druze guide will be expecting the visitors upon their arrival. The tour begins with a walk through the old alleys of the village of Usafia, passing by the prayer house, the deserted church and the ancient olive press while listening to the explanations and stories of the guide. The tour takes place in a scenic view and ends up in one of the homes of a Druze family. The visitors will get to know the family sitting around the taboon oven and will be invited to the "madpa"- the Druze guest room. The guide will tell stories about the life of the Druze, the hidden religion, rebirth of souls (amazing stories), the Druze woman and the army service. At the end of the lecture, trays loaded with the best of Druze authentic food. These are meals from the kitchen of the housewife. Its all you can eat, so food will keep coming out of the kitchen until everyone has enough! At the end of the meal the drums will be played to a folklore show while the guests drink tea, coffee and for dessert -sweet honey baklava.

Druze pita bread, mankish (pita with olive oil and zatar) muhmar (pita with sweet paprika and onions), stuffed grapevines, mansaf (rice with chicken noodles pine nuts) mansala (eggplant with humus and tomato sauce) kufta in tehina (lamb kebab in tehina) magadra, humus, tabula salad, olives, cold drinks (sodas and juices), tea, coffee, baklawa.

Druze Hospitality & mukhtar meal:
Druze pita bread, mankish (pita with olive oil and zatar) muhmar (pita with sweet paprika and onions), stuffed grapevines, stuffed zucchini with rice and tomato sauce, lamb mansaf (rice with lamb meat and noodles) mansala (eggplant with humus and tomato sauce), sfiha (pita bread with lamb meat on top) kufta in tehina ( lamb kebab in tehina) magadra, humus, tabula salad, olives, mineral water, natural juices, fruits of the season, cold drinks, tea, coffee, baklava.

The food is all made by the Druze traditions and is all you can eat.
Till now hundreds of tourists have taken part in the project, among them young Jews who for the first time took a glance into the Druze life.

Food is kosher by the Main Rabanut in Israel.
